Part 3


"3am comes around and I hear HELOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO. Can somebody help me?????

I come downstairs to find Monkey on the floor out of the bed underneath the pot. OHHHH EMMMM GEEE." (from part 2)


So I see Monkey on the floor under the pot and I'm lost for words or what to do. Remember I don't have any medical history. So I call my boss. At 3am. And she tells me to call the fire department. Now what I do know is that you cannot by any means pick up a person who is dead weight. You will break ze back. And I was young, I needed my back.

So I cover monkey up and chat with her and sit with her near the pot. She's a mixture of annoyed and relieved. And when the firemen get there her eyes light up with excitement. Big burly men get to lift her back into bed. bahahhaa. She was a trixter!!! She was flirting with those men like you wouldn't believe.

So I get her settled and she falls asleep as do I.

The next night I worked I get her all settled and I decided to hang out downstairs in the kitchen so I could spy on her to make sure she wasn't doing crazy things. So I chat on the phone with my bff for about 3-4 hours. You know, the kind of talk that you did in high school. Or even middle school. Chitter chatter over life and everything in it. It's now midnight. I spy. She's snoozing. So I go upstairs and I get ready for bed. Remember, I have the portable baby monitor. I can hear her snoozing. So I get into bed and go to sleep.

4am. HELOOOOOOOOOOOOOOOOOOOOOOO! Is somebody out there????

She's on the floor.....AGAIN..... So I dial 911...... AGAIN!

Home-made Biscotti


Have you ever made your own biscotti? It is really easy actually. Don't mind the pic. It was dark.


Biscotti

2 3/4 cups flour
1.5 cups sugar
1.5 teaspoons baking powder
1 teaspoon salt
2 eggs
2 egg yolks
6 tablespoons melted butter
1.5 teaspoons orange zest
1.5 cups of ________________**

**You can really add whatever you want here. I added chopped up pieces of milk chocolate and some macadamia nuts. You could add almonds and dried cranberries, You could do cashew and chocolate, hazelnut and white chocolate, pistachio, whatever you like. :D

  1. Oven @ 325
  2. In a bowl combine all dry ingredients and make a well.
  3. Place eggs and egg yolks in well. Start to stir.
  4. Add butter, stirring.
  5. Add orange zest, stirring.
  6. Add ____________ ingredient, stirring.

  7. Dough will form a ball and will be sticky.
  8. On floured surface, turn-0ut dough and need to get the dough soft.
  9. Divide dough into two portions.
  10. Shape each portion into 12-14 inch long loaf.
  11. Grease baking pan.
  12. Set each loaf onto baking pan. Slightly flatten loaves with your hand.
  13. Bake 25-30 minutes until brown and somewhat firm. You'll need to cut these.
  14. Cool for about 15 minutes.
  15. On a cutting board, use a serrated knife to cut loaf into 1/2 inch slices.
  16. Place slices on cookie sheets.
  17. Bake for 10 minutes each side. (turn)

Cool. **Note-each baking pan will yield different baking times. For example I used my pampered chef cookie sheet and it needed more time than what was given here. Just eye-ball-it.

Cherry Cheesecake Cookies



CHERRY CHEESECAKE COOKIES

3.5 c flour
2 ts baking powder
1 ts salt
2 8oz packages cream cheese soft
20 tbsp butter (2.5sticks soft)
1.5 cups sugar
2 lg eggs
2 ts vanilla
1 c graham cracker crumbs smashed
2 20 oz cans cherry pie filling

DON'T OVERMIX!!

mix up dry ingredients with a whisk, set aside.

cream together cream cheese, butter, and sugar.

add vanilla and eggs.

on low setting add dry ingredients.

refrigerate for about 30 minutes.

oven @ 350.

put graham cracker crumbs in a bowl for rolling.

make cookies into 1.5 inch balls

roll in crumbs

make an indentation on each cookie and spoon 3 cherries in each dimple.

bake 12-14 minutes or until done.

I'm the wolf!!!

Wolf

The rugged wolf is athletic, good-looking and brimming with self-confidence. A close relative of the domestic dog, it is stronger and more aggressive, managing to generate notoriety wherever it marks its territory. The wolf's dark reputation is mainly due to jealousy of its consistent success in work and romance. A wolf in full stride is quite impressive. Firing orders at subordinates while on the phone to customers, no one can get the job done quite as efficiently as the wolf.

With an innate understanding of the value of teamwork, it's always ready to take its place in the chain of command either as leader or as simply a member of the pack. When a wolf decides to innovate, it makes sure that it has the backing of a capable team. The wolf is clear-headed and strong-minded, always willing to compromise in the interests of getting a job done.

Wolves are facially expressive and readily communicate their emotional states with body language. They work hard at developing their social relationships, although unlike their cousin the dog they are quick to anger when they sense threats to the social order. When confrontations occurs, they sometimes react suddenly and violently, barking displeasure at offending subordinates. Close companions know to avoid their biting tongue until they resume their normal gregarious behavior.

Wolves are intensely ambitious and never shy from hard work. Socially adept, they function well in leadership and management roles as well as in jobs requiring vision and strength of character. Being a natural motivator, their instinctive understanding of group dynamics serves them well in goal-oriented tasks.

As bosses, wolves demand absolute loyalty and they provide the same allegiance to their employees. Their ability to perform under pressure helps them attain the highest executive levels, and with strong communication instincts they maintain a constant stream of notes, letters, and email to coworkers. Their instinctive understanding of the chain of command makes wolves excellent soldiers or law enforcement officers.

The weekend

consisted of 8 different girlfriends/2 days. Yay! What can a single girl do without her girlfriends? I am gonna be one of those women who are in the red hat club just because I like hanging out with my ladies. I heart my girls.

Friday night four of us went to see this: HILARITY!

But they insisted on saying that the wait would be 2 hours. :|

So we decided to try here ^ and they said 2 hours. :|

We then decided we'd have to sacrifice and go here^ 1.5 hour wait. :|

So we ended up HERE^ :| ewww. At least..


We had delicious mojitos!!!!!!!!!!!!! And hey we saved money eating at Fridays. :)

My house

I was talking to Sassy about IF we get a house we will be very busy with packing and moving. I also told her we should take some pics of our apartment so we can remember our times here. :) Here's some of our pics of our place. And NO I DID NOT CLEAN UP BEFORE MY PICS. Shoot me! And hey! It takes guts to show pics of your home unclean!

^You can fit a grown-woman in one of those drawers and close it. They are deep and huge!

^This and my big white mirror are my biggest $ purchases wayyyy back 12 years ago when I first moved out. Did you know I have been on my own for 12 years. Never been evicted or back to my parent's house. I moved out right at 18. :) Anyway this is a tapestry made from India and I bought it on a trip to Georgetown. It weighs about 10 pounds from all the detailing and beading and Tt and Lola climb up it like a scratching post (see the yellow square) and I yell and scream at them to get off! It ain't pretty.




^So my bed looks square but it is the softest bed ever. Why you ask? Because that's a giant memory foam topper baby!!! Wooohoooooooo. A splurge but so worth it. No more back pain.

Continue to Pray...

Hello friends. I ask that you continue to pray for me. So far things are looking pretty good. My mortgage broker says I am very close to getting the house I love so much. (Here.) I know that it is in God's hands. It seems like things are going very smoothly so I am pretty optimistic but I know that things can get rattled. Buying a house is stressful! But I have been putting the whole thing in His hands knowing if it's what He has for me that He will do what I cannot.


While in waiting I have been busy doing these things: ( you know it was gonna be list form, right? )

  • Homeschooling
  • Hanging' with the girlfriends
  • Keeping a clean car!
  • Keeping a clean house!
  • Finishing my dad's estate
  • Hangin' with the chickens
  • 2 Bible Studies
  • Organizing and de-cluttering

I am in a week-day bible study where we are studying 1&2 Timothy and Titus. But this week we get a break and we're watching Joan of Arc the movie. :D I've also started going to a single mother's class called "21 Principles of a Healthy Single Mom". It is a huge class with 26 women so far and it lasts for 6 months. :D I am excited!

Also I congered up 10 bags for donation. 7 bags went to Haiti full of clothes, shoes, coats, and things they could use. I got rid of a lot of stuff!!!!! And I even have a whole dresser drawer empty and ready for use. !!!

I am Blessed

There is so much good surrounding my life and my walk in Christ. Solely focusing on those things is what keeps me afloat in pain and heartache and loneliness and fear. How else can we survive this horrible world we live in??? Looking at God's blessings and His love. And realizing ALLLLL things work together for our good for us who love Him.


I am a horrible person and I know it. But knowing who we are in Christ changes our lives and delivers us. I am so happy that God has worked my life and I have chosen to listen to His direction. Because of this I have received the giant blessing of Freedom in Christ. I KNOW who I am in Jesus. What a wonderful thing. So many people don't get that. Even Christians. That blessing alone could carry my life into bliss until it ends.

But God cannot stop there. No way. He's gotta pour our wayyyy more blessings on me. Why? Oh I can't fathom why He loves me so much. But what honor to know that He does.

If I wrote a list on some of the blessings I receive DAILY I'd take up most of this page. God's goodness surrounds my thoughts everyday and keeps me above the evil life I had before. I have seen with my very eyes the fall of wonderful Christian people who once were on fire for God but life discouraged them so badly that they lost God. They literally forgot about Him. They listened to the evil one and actually believed the lies he spoke.

Friends for me I must constantly keep my eyes, ears, lips, and heart fixed on the Father. I know what can happen when we slide from Him. I really do know. And I don't wanna be there.

So I like to talk about, think about and read about all things God & Jesus. I know that when life's tragedies and heartache come at me again I will be strong and faithful to my Lord. Because I have invested my time in Him.

And I thank the Lord I am finally at that place. How long I rode the short bus of avoiding God's truth. What a blessing, indeed.

P.S. I made a home-made chicken pot pie and cherry cheesecake cookies tonight. Just so you know. And I really thought about taking pictures of them, but it is about -40 degrees outside and I didn't want to go get the camera from my car!! So use your imagination. ;-)
